Welcome to Yesterday’s Curry, by me, Emma Ryan
I am a Goan chef, food writer and illustrator based in London.
After graduating from Leiths School of Food & Wine as a classically trained chef, I have been exploring the food of my heritage, teaching myself Goan cooking from the ground up and learning about Goan cooking traditions. After receiving such support and encouragement from facebook communities Traditional Goan Foodies and The Goan Culinary Club, I have been sharing my culinary creations with Goans around the world, and now plan to extend that further in this newsletter.
Yesterday’s Curry is the literal translation of Kalchi Kodi, the classic Goan coconut fish curry which is even more delicious heated up the next day and soaked up by Goan Portuguese Pão.
In this newsletter, I will share the knowledge I have been researching for the past year and each month I will publish an in depth article about an area of Goan cooking, a classic recipe, a tradition or an interview.
My first newsletter, launching on the final Sunday of March is an in depth exploration of Goan bread making. I will discuss the many different types of Goan bread, the history of the Goan bread making tradition, and will include interviews with successful Goan bread makers as well as my own illustrations, tips and tricks.
